Recipes Using Rosemary

Ingredients
• 1 pizza dough (store-bought or homemade)
• 1–2 potatoes, thinly sliced (as thin as possible)
• 1 tsp fresh rosemary (or ½ tsp dried rosemary)
• 100–150g mozzarella cheese

1. Preheat the oven
Preheat your oven to 220°C (425°F).
2. Prepare the potatoes
If using unpeeled potatoes, wash them thoroughly and slice them thinly (less than 0.3 cm).
Soak the slices in cold water for 10 minutes, then drain and pat dry with a kitchen towel. This helps remove excess starch and makes the potatoes crispier.
3. Prepare the dough
Roll out the pizza dough thinly and place it on a baking sheet.
Brush the surface evenly with olive oil.
4. Add the toppings
Layer the potato slices on the dough without overlapping.
Sprinkle salt, pepper, and rosemary evenly.
Generously add mozzarella cheese on top.

5. Bake
Bake in the preheated oven for 12–15 minutes, or until the cheese is melted and the edges of the crust are golden brown.
TIP
Thick or overcrowded potato slices may take longer to cook. Thin slicing is key.
